Quinoa Salad


Ingredients:

1 c Quinoa (3 c cooked)
1 1/2 c Grapes (both Green & Red)
1/2 c Nuts (I like diced Peacans, candied)
1/4 c Green Onions
1/4 c Canola Oil
2 T Lemon Juice
1 T Sugar
1/4 tsp Salt

Prepare quinoa as directed on package (2:1 ratio with water.) Put in refrigerator to cool.
For Dressing, add all ingredients, excluding Grapes, onions, and pecans. Whisk dressing and add to Quinoa (preferably cooled a little.) Add grapes, onions, and pecans. Serve cooled.

*If you like a more savory taste, try this recipe ~

1 c Quinoa

1/4 c Garlic - minced
1 T Olive Oil
1 T White Vinegar
1/4 c Fresh Cilantro
1 c Red Grapes - Cut in halves
Feta Cheese
Pecans - Diced



Prepare quinoa as directed on package (2:1 ratio with water.) Put in refrigerator to cool.
