Ingredients:
1/3 c Sugar
1 1/4 c Whole Wheat Flour
1/2 c CREAM OF WHEAT - uncooked
1 T Baking Powder
2 tsp Ground Cinnamon
1/2 tsp Salt
1/2 c Apple Juice
1/2 c Milk
1 Egg, lightly beaten
2 Tbsp Butter - melted
1 small Apple - peeled & chopped
Mix sugar, flour, cereal, baking powder, cinnamon, and salt in a large bowl. Set aside. In another bowl, mix apple juice, milk, egg, and butter. Add to dry ingredients. Fold in chopped apples.
Spoon into 12 greased medium muffin cups.
Bake at 400 fir 18-20 minutes.
You can brush tops with apple juice and sprinkle with sugar.
130 calories per muffin.
